Komaj Bread

Komaj is a traditional, enriched bread prepared differently across various Iranian regions (such as Hamedan and Mazandaran). Unlike flatbreads, its dough often includes turmeric, cumin, and sometimes sugar or molasses. It usually has a thick, soft texture and was historically baked under hot ashes or in copper pots. Due to its high calorie content, it served as a complete meal for farmers and shepherds.
