View ProfileTiri bread is an exceptionally thin, paper-like crispbread traditional to the Lurs and Bakhtiari nomadic tribes. Its name derives from the "Tir," a long, thin rolling pin used to flatten the dough to extreme thinness. It is baked on a "Saj" (a large convex metal griddle). Due to its low moisture content, it has a very long shelf life and is typically lightly misted with water to soften before serving.
