It is produced on small farms; during production, milk is collected from free-grazing sheep and immediately chilled to preserve the freshness of the final product. This sheep milk is characterized by its high natural fat content (about 6%) and richness in calcium, magnesium, and phosphorus. During production, the milk is placed in stainless steel cooling tanks immediately after milking, reducing its temperature to 4°C in less than 15 minutes. This process prevents bacterial growth and maintains milk quality.
